Besan Chakki is a dense, ghee-rich fudge made by roasting gram flour (besan) in pure cow�s ghee until it turns deep golden and fragrant, then binding it with sugar syrup and cardamom. The roasting step is where the flavour lives � under-roasted besan is raw and dull; properly roasted besan turns sweet and nutty. Ours is roasted slow.
